Instant Pot Brown Sugar Baked Beans
Description
This recipe combines yellow onion, rinsed canned kidney, pinto, and northern beans with ketchup, water, brown sugar, yellow mustard, and chili powder in an Instant Pot. The ingredients are stirred to mix and cooked on high pressure for 8 minutes, then naturally released before stirring and serving.
The resulting baked beans are thick and richly flavored, balancing sweetness from the brown sugar and ketchup with a touch of acidity from mustard and mild heat from chili powder. The beans remain tender but intact from the pressure cooking.
This recipe can also be adapted for oven baking by cooking the ingredients in a skillet, then covering tightly and baking at 350°F for 45 minutes. Variations include cooking dried beans or adjusting the amount of seasoning.
Because the supplied notes mention precise oven technique, this is useful as an alternative method. Leftover baked beans can be reheated and served as a hearty side dish.
