Ingredients
For cake:
- 1 box spice cake mix plus ingredients to prepare mix (eggs, oil, water)
- ½ cup orange juice or pineapple juice from crushed pineapple
- 1 ¼ cup shredded carrots
- 2 ounces crushed pineapple drained
- ½ cup raisins optional
- ½ cup Chopped Pecans
For frosting
- ½ cup butter room temperature
- 8 ounces cream cheese room temperature
- 1 teaspoon vanilla
- 3 cups powdered sugar

Notes
- Use your favorite box cake brand- I like Duncan Hines Super Moist Spice Cake Mix.
- Cake should keep for 7 days if refrigerated.
