Instant Pot Carrots with Honey Glaze
Description
This recipe uses baby carrots cooked in an Instant Pot with brown sugar, butter, cinnamon, nutmeg, and salt, along with a small amount of water. The ingredients are combined and cooked on high pressure for a short time, which softens the carrots while infusing them with sweetness and spice. Once the pressure cooking is complete, the lid is removed and the carrots, along with their cooking liquid, are transferred to a serving bowl.
The carrots are then drizzled with honey, which adds a floral sweetness that balances the spiced glaze. A sprinkle of freshly chopped parsley can be added for a fresh herbal note and color contrast. The result is a soft, glossy side dish with a sweet and warmly spiced profile. The cooking liquid left in the pot is flavorful and can be spooned over the carrots before serving to enhance moisture and taste.
Leftovers store well in the refrigerator for up to four days and can be reheated gently in the microwave or on the stovetop over low heat to retain their texture and flavor.
Ingredients
- 2 pounds carrot baby
- 1/2 cup water
- 1/2 cup brown sugar
- 4 Tablespoons butter unsalted
- 1 teaspoon cinnamon
