Ingredients

Servings
  • 2 Tablespoon neutral cooking oil generic cooking oil
  • 2 Tablespoon flour
  • 1 teaspoon salt or to taste
  • 3 chicken thigh chopped into bite sized pieces, boneless
  • 3 celery ribs sliced
  • 3 carrot sliced
  • 1 onion chopped
  • 1 clove garlic minced
  • 3 cups chicken broth
  • 1/2 teaspoon thyme
  • 1/2 teaspoon rosemary
  • 3 refrigerator biscuits
  • 1 cup peas frozen

Instructions

  1. Turn the Instant Pot to Saute, and add the oil. Let it heat for a minute or two.
  2. Add the chicken, flour and salt to the pressure cooker. Cook, stirring, for 2-3 minutes.
  3. Turn the Instant Pot off, and add the celery, carrots, onion, garlic, thyme and rosemary. Stir.
  4. Add the chicken broth to deglaze the inner pot. Stir to mix all the ingredients and scrape the bottom of the Instant with a wooden spoon to make sure there are no pieces of browned chicken stuck to the bottom.
  5. Flatten the refrigerator biscuits slightly and cut into strips. Add the strips to the Instant Pot but don't stir them into liquid, let them stay on top.
  6. Put the lid on the pressure cooker and make sure it is sealed correctly. Place the Instant pot into Manual mode and set it for 7 minutes on high pressure.
  7. When the cook time is done let the pressure release naturally for about 10 minutes, and then release any remaining pressure manually and remove the lid.
  8. Stir the frozen peas into the soup and replace the lid. Let it sit for 2-3 minutes so the peas can cook.
