Instant Pot Chicken and Gravy

This Instant Pot Chicken and Gravy recipe uses boneless skinless chicken breasts cooked in a seasoned chicken broth with ranch seasoning and garlic powder. Pressure cooking locks in moisture, producing tender chicken with a flavorful gravy thickened using cornstarch and a packaged gravy mix. It pairs well with mashed potatoes, rice, or noodles.

Description

The recipe starts by combining chicken broth with ranch seasoning, garlic powder, and black pepper in the Instant Pot, creating a flavorful liquid base. Chicken breasts are added and cooked under high pressure for 8 minutes, ensuring the meat is tender without drying out. A natural pressure release allows the chicken to rest briefly.

After cooking, the chicken is removed, and cornstarch mixed with water is added to thicken the broth alongside a chicken gravy mix. Heating on the sauté function dissolves the gravy mix and thickens the sauce to a smooth consistency. The chicken is then chopped and added back to the pot, blending with the rich gravy.

This chicken and gravy dish is practical for weeknight dinners and serves well over mashed potatoes, baked potatoes, pasta, egg noodles, or rice. Using ranch seasoning adds a savory herb element to the gravy, complementing the mild chicken flavor. Adjustments to chicken size and salt content are possible for dietary preferences.

Ingredients

Servings
  • 2 pounds chicken breast boneless skinless
  • 1.5 cups chicken broth
  • 1 packet ranch seasoning mix (I used Hidden Valley)
  • 1/4 teaspoon garlic powder
  • black pepper to taste
  • 1 teaspoon cornstarch with 1 teaspoon cold water
  • 1 packet chicken gravy mix

Instructions

  1. Add the chicken broth, ranch seasoning mix, garlic powder, and pepper to your Instant Pot. Whisk until the powders have dissolved.
  2. Add the chicken and ensure it's mostly submerged (spoon some liquid over top if it's not). Close the lid, ensure the valve is on "sealing", and then set the timer to cook on high pressure for 8 minutes.
  3. Let the pressure release naturally for 5 minutes and then quick release the remaining pressure.
  4. Take the chicken out of the Instant Pot. Mix the cornstarch and water together in a small bowl. Pour it into your Instant Pot, along with the chicken gravy mix. Press the "sauté" button and whisk until the gravy mix has dissolved. The sauce will thicken within a few minutes, so turn the sauté function off (press the "keep warm" button) once it's about as thick as you want it. Meanwhile, cut the chicken up, and then add it back into the Instant Pot.
  5. Serve immediately. It's delicious with mashed potatoes (or baked potatoes), pasta/egg noodles, or rice.

Notes

  • Use chicken breasts totaling about 2 pounds; larger pieces may require 1-2 additional minutes of cooking.
  • Low-sodium chicken broth is recommended if controlling salt intake, as both ranch and gravy mixes contain salt.
  • This recipe can be adapted for a slow cooker version following similar seasoning steps.
  • A 6-quart Instant Pot was used for this recipe, ensure your model can accommodate similar liquid volumes.
