Instant Pot Chicken and Lentil Soup
Description
Instant Pot Chicken and Lentil Soup uses dried lentils and boneless chicken thighs cooked together with chopped onion, garlic, tomato, and a combination of spices including cumin, garlic powder, oregano, and Sazon seasoning. Chicken bouillon adds depth, while fresh scallions and cilantro stirred in after cooking contribute brightness. The ingredients are simply combined in the Instant Pot and cooked under pressure to tenderize the lentils and cook the chicken through.
The resulting soup offers tender poultry and lentils softened to a stew-like consistency with aromatic herbs and savory seasoning that balance mild smokiness and fresh accents. The shredded chicken disperses through the soup for satisfying protein.
This recipe produces about 11 cups, making it suitable for multiple servings or leftovers. It serves well as a simple lunch or dinner option that can be paired with bread or a light salad.
