Instant Pot Chicken and Rice

Instant Pot Chicken and Rice combines tender chicken breasts with creamy, slightly sticky jasmine or basmati rice cooked in a flavorful broth enriched with lemon juice, garlic, and Italian seasoning. The recipe includes optional carrot slices for a bit of sweetness and texture. Cooking everything together in an Instant Pot makes for a convenient one-pot meal where the rice absorbs the savory cooking liquid, resulting in a comforting and well-balanced dish.

Description

The Instant Pot Chicken and Rice recipe brings together boneless chicken breasts and white rice cooked under pressure with chicken broth, lemon juice, garlic, and Italian seasoning. This method produces chicken that stays moist while the rice becomes soft, creamy, and slightly sticky from absorbing the flavorful broth. The inclusion of butter and optional sliced carrots adds richness and subtle sweetness to the dish. The use of the sauté function to cook onion and garlic beforehand layers additional flavor before sealing and pressure cooking the ingredients together. After pressure cooking, the rice is stirred to distribute moisture evenly, optimizing the creamy texture.

This dish serves well as a standalone meal, with balanced protein and starch and touches of herb and citrus providing brightness. It can be plated simply or accompanied by a fresh salad or steamed vegetables for a more complete meal.

Following the exact steps and ingredient proportions helps avoid the "burn" warning common in some Instant Pot models when cooking rice-based dishes. Using rinsed rice minimizes starchiness and prevents clumping. The recipe makes four generous servings, or more if serving smaller portions. Low-sodium broth can be used to control saltiness, and seasoning can be adjusted to taste right before serving.

Ingredients

Servings
  • 4 chicken breast
  • 1/2 medium onion chopped
  • 1 tablespoon olive oil
  • 2 cloves garlic minced
  • 2.5 cups chicken broth
  • 2 tablespoons lemon juice
  • 1 cup white jasmine rice rinsed, or basmati
  • 4 dashes Italian seasoning
  • 1 tablespoon butter
  • 3 medium carrot peeled & sliced (optional

Instructions

  1. Season both sides of each piece of chicken with salt & pepper.
  2. Press the sauté button on your Instant Pot. Add the oil and onion and sauté for 3-4 minutes. Stir in the garlic, then add the chicken broth, lemon juice, rice (rinse it first), Italian seasoning, and butter. If you want to add carrots, add those in at this point too. Leave the sauté button pressed so it heats up as you're adding the ingredients.
  3. Give the ingedients in the Instant Pot a good stir (make sure nothing is sticking), and then immediately add the chicken pieces on top. Close the lid, set the valve to "sealing", and cook on high pressure for 12 minutes.
  4. Once the countdown has completed, let the pressure release naturally for 5 minutes, then quick release the rest of the pressure. Give the rice a stir prior to serving (it will absorb a little more liquid as it rests for a few minutes). The rice will have a consistency that's soft, creamy, and a little sticky. If needed, season with salt & pepper to taste.

Notes

  • Use rinsed jasmine or basmati rice to help achieve the desired creamy yet slightly sticky texture.
  • Adding carrots is optional but contributes a mild sweetness and color contrast.
  • Follow cooking and seasoning instructions precisely to avoid burn warnings with the Instant Pot.
  • This recipe yields about four generous servings, suitable for family meals.
  • Using low-sodium chicken broth lets you better control salt levels according to preference.
