  • 1 tsp cornstarch

Instructions

  1. Turn on the Sauté mode on your Instant Pot. Once the pot is fully heated (to prevent the chicken from sticking), add the cooking oil.
  2. Pan-sear the chicken thighs until they turn slightly brown on the surface. (If they stick to the pot too much, you can use a non-stick skillet for searing or skip this step.)
  3. Add the soy sauce, mirin, and sugar. Cover the pot, select Manual, and set it to High Pressure for 6 minutes.
  4. When it beeps, perform a quick release. Once the valve drops, carefully remove the cover. Set the Instant Pot to Sauté mode, then add the cornstarch slurry and stir to thicken the sauce.
