Instant Pot Chili
Description
This chili recipe begins by sautéing ground beef in the Instant Pot until browned, then softening onions and red bell pepper alongside for aromatic depth. The addition of canned beans, diced tomatoes, tomato sauce, corn, garlic, and a blend of red pepper flakes, paprika, and taco seasoning builds a robust, mildly spicy base. Chicken broth adds moisture and helps balance the tomato acidity.
Cooking under pressure for 25 minutes tenderizes all ingredients and develops a thick consistency where flavors are well integrated. The chili balanced with savory beef and subtle heat has a hearty, stew-like texture with soft beans and tender meat.
It is ideal served with grated sharp cheddar cheese, chopped green onions, and a dollop of sour cream to add creaminess and freshness. This makes a convenient meal for colder days, suitable as a main course accompanied by bread or simple side salads.
Ingredients
- 1 lb ground beef
- 15 oz pinto beans canned
- 15 oz Kidney Beans canned
- 15 oz diced tomatoes canned
- 5 oz tomato sauce
- 2 cups chicken broth
- 10 oz corn canned
- 3 garlic cloves
- 1 onion large
- 1 red bell pepper large
- 2 tbsp red pepper flakes
- 1 tbsp paprika
- 2 tbsp taco seasoning
- salt to taste
- 1 cup cheese grated
- 1 cup green onion diced
Instructions
- Gather all your ingredients.
- Brown your ground beef in the Instant Pot on "Saute Mode". While the beef is cooking, continue stirring it so it doesn't stick together. Add in bell pepper and onion and saute until they turn golden brown.
- Rinse beans and drain corn. Add the remaining ingredients into the instant Pot (beans, chicken broth, corn, diced tomatoes, garlic, red pepper flakes, paprika and taco seasoning) and season it with a bit of salt.
- Set the timer to 25 minutes and let the Instant Pot come to pressure and cook. Once it beeps, do a "Quick Release". For serving, top it with some grated extra sharp cheddar cheese, chopped green onions, and a dollop of sour cream.
