Instant Pot Chocolate Covered Strawberries
Description
The recipe melts white and milk chocolate chips separately using an Instant Pot set to low heat as a double boiler, preventing chocolate from overheating. Strawberries are dipped individually into white chocolate to form the first layer and placed on a tray to set. Then each berry is dipped again into the milk chocolate layer and allowed to set in the refrigerator, creating a two-tone chocolate covering with a smooth texture.
The chocolate coating provides a firm, sweet contrast to the fresh, juicy, and slightly tart strawberries. This method secures an even chocolate layer that is not too thick, allowing the strawberry flavor to come through while adding creamy chocolate richness.
These can be served as an elegant dessert or a special treat. Decorating leftover chocolate by drizzling over the berries adds visual interest. Refrigeration ensures the chocolate hardens properly and keeps the strawberries fresh.
Using soft, ripe strawberries improves dipping ease and flavor. Adding a bit of coconut oil to chocolate when melting can enhance smoothness. Melt on low heat settings and stir frequently to prevent scorching. Allergy-friendly chocolate alternatives are available as needed.
Ingredients
- 1 ½ cups white chocolate chips 225g
- 1 ½ cups milk chocolate chips 225g
- 24 strawberries
Instructions
- Put white chocolate in a heatproof bowl that fits inside the Instant Pot insert.
- Put the milk chocolate in a separate heatproof bowl that also fits in the Instant Pot insert.
- Add 1 cup of water into Instant Pot insert, select the sauté button, and set to less heat.
- Stir periodically until white chocolate is fully melted. Remove the bowl.
- One at a time, dip the strawberries into white chocolate, then place on a baking tray to set.
- Add about another half cup of water to your Instant Pot.
- Again, use the Instant Pot as a double boiler and place the bowl of milk chocolate over the Instant Pot and allow it to melt.
- Remove the bowl and then dip each of the coated berries into the milk chocolate, place back on the baking tray and let them set.
- To decorate, drizzle any leftover chocolate over the strawberries.
- Place the tray in the fridge to allow the chocolate to fully cool and harden before serving.
Notes
- Use soft, ripe strawberries for easier dipping and better texture contrast with the chocolate.
- Adding a small amount of coconut oil when melting chocolate can improve its smoothness.
- Use the low or normal sauté setting on the Instant Pot and stir often to avoid overheating chocolate.
- For allergen considerations, try allergy-friendly chocolate options like EnjoyLife morsels.
- Leftover melted chocolate can be piped to decorate the strawberries for presentation.
