  • 2 cups vegetable broth
  • 1 lime zest and juice
  • 1 teaspoon salt
  • 2 cups white Basmati rice rinsed
  • 1 bunch cilantro rinsed and roughly chopped

Instructions

  1. Combine the vegetable broth, lime zest, and salt inside the Instant Pot liner.
  2. Add the rice and make sure it’s evenly spread by patting it down. No need to stir.
  3. Pressure cook on high pressure for 3 minutes then NPR before opening the lid. Add the chopped cilantro and lime juice.
  4. Mix until well combined. Add more salt and lime juice if needed.
