Instant Pot Cilantro Lime Rice
Description
Instant Pot Cilantro Lime Rice uses basmati rice cooked under pressure with vegetable broth, lime zest, and salt to absorb flavor throughout the grain. Using the Instant Pot’s high pressure mode allows the rice to cook quickly without stirring. After natural pressure release, chopped cilantro and fresh lime juice are added for a bright, fresh finish that enhances the rice’s fragrance and flavor.
The rice grains remain separate and fluffy from the rinsing and pressure cooking method. The herbaceous cilantro combined with tangy lime juice and zest provides a refreshing and balanced flavor profile suitable for pairing with Mexican dishes, grilled proteins, or as a simple flavorful side.
Ingredients
- 2 cups vegetable broth
- 1 lime zest and juice
- 1 teaspoon salt
- 2 cups white Basmati rice rinsed
