Instant Pot Cilantro Lime Rice Recipe
Description
This recipe uses dry long-grain white rice cooked in an Instant Pot with water and then lightly seasoned with garlic salt. After pressure cooking and a natural pressure release, fresh lime juice is squeezed over the rice along with chopped cilantro. This post-cooking addition preserves the bright, fresh flavors of lime and herbs rather than cooking them away. The rice turns out fluffy with subtle acidity and herbaceous notes.
The simple seasoning makes this rice a versatile accompaniment to dishes like tacos, grilled meats, beans, or vegetables. Lime and cilantro add a classic complementary flavor commonly found in Mexican or Tex-Mex cuisines.
Leftover rice stores well in an airtight container in the refrigerator for up to a week and also freezes for months, making it easy to prepare ahead or keep on hand for quick meals.
Ingredients
- 3 cups white rice dry long grain
- 3 cups water
- 2 tsp garlic salt
- 1 lime
- 1/2 cup cilantro chopped
Instructions
- In an Instant pot, pour in the rice and water.
- Stir to combine. Place the lid on top and make sure the valve is set to sealing position.
- Press the rice button. If you do not have a rice button click the manual button and set the time for 3 minutes.
- After the cook time, allow the pressure to release from the Instant pot naturally for 20-25 minutes (do not move the value on the lid to the vent position until after that time).
- Then season the rice with the garlic salt. Squeeze the fresh lime juice over it and stir in the fresh cilantro.
Notes
- Keep leftovers refrigerated in a sealed container for 5 to 7 days for freshness.
- Freeze cooked rice in a freezer-safe bag for up to 2 to 3 months to preserve quality.
