Instant Pot Dr Pepper Pot Roast Recipe

This pot roast recipe uses boneless chuck roast cooked in an Instant Pot with Diet Dr Pepper, butter, garlic, salt, and pepper. The soda adds a subtle caramel sweetness, while pressure cooking tenderizes the meat quickly. The result is a juicy, flavorful roast perfect for an easy meal.

Description

Begin by browning the pot roast in melted butter in a hot skillet to develop a flavorful crust. Seasoned simply with sea salt and black pepper, the browned roast is then transferred to the Instant Pot. Garlic cloves and two cans of Diet Dr Pepper are added around the meat, providing moisture and a sweet-savory braising liquid.

The Instant Pot is sealed and set to high pressure for 45 minutes, allowing the brisket to become tender without long cooking times. A natural release of approximately 15 minutes helps preserve juiciness. The resulting beef is richly flavored and tender enough to shred or slice.

This pot roast pairs well with mashed potatoes or roasted vegetables, using the cooking liquids as a sauce base. The recipe simplifies traditional slow roast techniques by using pressure cooking with an unconventional sweet soda component for balancing flavors.
