Ingredients

  • 8 egg large
  • 1/2 cup cottage cheese
  • 1 cup cheese shredded
  • 3/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/3 cup half and half or heavy cream
  • 1 cup cooked protein divided
  • 1/2 cup vegetables divided

Instructions

  1. Grease silicone molds and set aside.
  2. Prepare meat if adding by pre-cooking sausage or bacon.
  3. Dice vegetables of choice - peppers, onion, mushrooms and set aside.
  4. Shred cheese and set aside.
  5. In a blender add eggs, cottage cheese, half and half with salt and pepper.
  6. Blend until all ingredients are mixed well.
  7. Add 1 tablespoon of meat and 1 tablespoon of vegetables to each greased egg mold. Top with a teaspoon of cheese.
  8. Pour egg mix over the mix. Top with additional cheese if desired. Cover the mold with the silicone top.
  9. Place trivet on the bottom of your Instant Pot and add one cup of water.
  10. Put covered egg molds into the Instant Pot (may want to use silicone holder).
  11. Secure the Instant Pot lid (vent closed).
  12. Press steam mode and add 8 minutes to timer. Once timer beeps let pressure release for an additional 10 minutes.
  13. Open Instant Pot and enjoy your fresh egg bites!

Notes

  • Meats such as sausage, ham, bacon, shrimp, or ground beef can be used as fillings.
  • Vegetables including onion, various peppers, spinach, kale, mushrooms, zucchini, asparagus, tomatoes, or broccoli complement the egg bites well.
  • Cheese varieties like Monterey Jack, Cheddar, Gouda, Feta, Mozzarella, Colby, Swiss, or Cotija can be used for different flavors.
  • For a lighter option, substitute one whole egg with additional egg whites.
