Description
The recipe uses simple ingredients enriched by the Instant Pot's high-pressure cooking, which tenderizes the chicken and allows the spices and vegetables to infuse the dish deeply. The shredded chicken absorbs the creamy texture from the melted cream cheese and brightness from fresh lime juice, balancing richness with citrus notes.
After cooking, the chicken is shredded and returned to the pot, then combined with cream cheese and lime juice on the sauté setting to create a creamy, cohesive filling ideal for tacos, burritos, or served over rice. The mix of canned black beans, corn, and diced tomatoes adds texture and body.
Leftover fiesta chicken keeps well refrigerated in an airtight container for 5-7 days. Using a pre-mixed Fiesta Ranch seasoning packet can substitute ranch and taco seasonings for convenience.
Ingredients
- 4 chicken breast
- 1 ranch seasoning mix
- 2 Tbsp taco seasoning
- 1 black beans Rinsed and Drained, canned, 15 oz
- 1 diced tomatoes with green chiles canned, 8 oz
- 1 corn canned, 15.25 oz, not drained
- 1 cup chicken broth
- 8 oz cream cheese diced
- 2 lime fresh
Instructions
- Add all the ingredients except for the cream cheese and fresh limes to an instant pot. Stir to combine all the ingredients.
- Seal the instant pot by moving the valve on the lid to the seal portion.
- Cook on high pressure for 25 minutes.
- After the cook time, do a quick release of the pressure by moving the valve on the lid to the vent position.
- Remove the chicken, shred and return the chicken back to the instant pot.
- Switch the instant pot to the sauté setting.
- Squeeze the limes over the chicken mixture , add in the cream cheese and stir to combine.
- Heat for 3-5 minutes until the cream cheese is melted.
- Serve over rice or with tortillas and enjoy!
Notes
- A Fiesta Ranch Seasoning Packet may replace individual ranch and taco seasonings if preferred.
- Store leftovers in an airtight container refrigerated for 5-7 days.
