Description
This recipe cooks baby carrots in an Instant Pot steamer basket for 2 minutes at high pressure, quickly making them fork tender without waterlogging. After steaming and discarding water, the pot is used to sauté butter with minced or powdered garlic and herbs such as oregano and thyme. Adding the carrots to this mixture allows them to absorb the garlic butter flavors and slightly brown if desired.
The dish is seasoned with salt and pepper to taste and can be adjusted by changing herbs to basil, parsley, or others. The buttery, garlicky coating complements the natural sweetness and soft texture of steamed carrots, making this a straightforward vegetable side dish suitable for various meals.
For a vegan version, substitute butter with vegan butter or olive oil. Whole carrots can be cut into pieces to match baby carrot size. The recipe was tested in a 6-quart Instant Pot DUO60, but steaming times may vary slightly with other models.
Ingredients
- 1 lb carrot baby
- 1 cup water for steaming
- 2 tablespoon butter
- 1 teaspoon garlic minced or Garlic powder
- 1 teaspoon herbs (oregano, thyme)
- salt to taste
- black pepper to taste
Instructions
Steaming Carrots
- Add water to the instant pot insert. Place the steamer basket in the insert. Spread the carrots on the steamer basket. Close lid with vent in sealing position.
- Start the instant pot and set it on Steam mode for 2 minutes on high pressure.
- When the instant pot beeps, quick release the pressure manually. Remove the steamer basket carefully as it is hot. Discard water in the instant pot steel insert.
Preparing Garlic Herb Carrots
- Place the steel insert back in the pot and heat it on Saute mode.
- Add butter and let it melt. Add garlic and saute for a few seconds.
- Add carrots and mix well with the butter.
- Stir in the herbs. Let the carrots cook for 2-3 minutes while stirring frequently. (I like them slightly browned on the edges, but this is not necessary. Adjust to your preference)
- Season with salt and pepper. Transfer to a serving bowl and Enjoy!
Notes
- Whole carrots can be cut into 2-inch pieces to substitute baby carrots.
- Garlic powder can replace minced garlic if preferred.
- Use dried or finely chopped fresh herbs like thyme, oregano, basil, or parsley.
