Instant Pot Green Beans with Garlic & Lemon
Description
The recipe uses the steam function on an Instant Pot to cook green beans quickly without waterlogging, preserving their bright color and crunch. Once steamed, the beans are removed and the pot is used to sauté minced garlic lightly in butter, allowing the garlic to infuse the fat and develop a golden aroma. The steamed beans are then added back into the pot, warmed through, and tossed with lemon juice, salt, and pepper. This finish adds depth and freshness to the beans.
This side dish pairs well with a variety of mains, providing a clean but flavorful vegetable option. The use of butter can be substituted with oil for a vegan variation, and garlic powder can replace fresh garlic if desired. For softer beans, a longer pressure cooking time is an option.
Using a trivet or steamer basket keeps the beans out of the water for steaming, ensuring a steamed rather than boiled texture. Quick pressure release minimizes overcooking.
