Description

This bean soup begins by sautéing diced carrots, celery, and onion in olive oil directly in the Instant Pot. The rinsed 15-bean mix and chicken stock are added, then pressure cooked for 40 minutes at high pressure, allowing the beans to soften thoroughly without pre-soaking. After natural pressure release, seasoning packets, diced ham, and spices including black pepper and red pepper flakes are stirred in to enhance depth and warmth in flavor.

The ham adds smoky savory character, while the seasoning mix—often included with the bean package—balances the earthiness of the beans. Letting the soup rest for a few minutes before serving allows the flavors to meld. Garnishing with fresh parsley brightens the dish.

For slow cooker preparation, ingredients can be cooked on high 5-6 hours, then seasoned and cooked an additional hour until beans are tender. Using a ham bone adds richer flavor; after cooking, the bone is removed, meat shredded, and returned to the soup. Additional spices like smoked paprika, garlic powder, and cumin can be added if seasoning packets are unavailable.

  • 1 tablespoon olive oil
  • 2 large carrot peeled and diced
  • 2 talks celery diced
  • 1 sweet onion diced
  • 20 ounces 15 Bean Soup mix see notes
  • 7 1/2 cups chicken stock
  • 2 cups ham cooked, diced
  • 1 teaspoon black pepper
  • 1 teaspoon red pepper flakes

Instructions

  1. Turn pressure cooker to "saute" and add the oil to the pot. Once hot, add the carrots, celery, and onion and cook, stirring often, for 5 minutes. 
  2. Rinse and sort through the beans. Add to the pressure cooker along with the chicken stock. If your bean mix came with a seasoning packet, set aside. 
  3. Turn the pressure cooker off.  Put on the lid and set the vent to "sealing." Set the pressure cooker to "high pressure" for 40 minutes. 
  4. Once the soup has reached pressure and cooked for 40 minutes, allow the pressure to release naturally, about 20 minutes.
  5. Remove the lid carefully and stir in the seasoning packet, ham, black pepper, red pepper flakes. Taste and add salt if needed. 
  6. Stir well, cover the pot, and let set for 5 minutes to allow the ham to heat through. 
  7. Serve hot. Sprinkle with fresh parsley as desired.

Notes

  • Commonly use Hurst's Beans 15 Bean Soup Mix with included seasoning packet.
  • If using a mix without seasoning, add 2 tsp smoked paprika, 2 tsp salt, 1 tsp garlic powder, 1 tsp onion powder, 1 tsp cumin, and ½ tsp chili powder instead.
  • Slow cooker option: Combine ingredients, cook on high 5-6 hours, add seasoning, and cook an additional hour.
  • Adding a ham bone during cooking enhances flavor; remove bone and shred meat before serving.
