Ingredients

  • 4 russet potatoes peeled and diced into 1 inch pieces, large
  • 1 onion medium, diced
  • 2 carrot peeled and diced, large
  • 1 celery diced, stalk
  • 1 pound ham diced
  • 2 teaspoons parsley fresh
  • 1/2 teaspoon thyme dried
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 cups chicken broth
  • 1 cup heavy whipping cream
  • 2 Tbsp cornstarch
  • 1/2 cup sour cream

Instructions

  1. Place all the ingredients except for the heavy whipping cream, corn starch and sour cream in an Instant Pot.
  2. Stir to combine.
  3. Seal and cook on high pressure for 10 minutes with a quick release.
  4. Then in a small bowl, combine the heavy whipping cream with the cornstarch.
  5. Switch the Instant Pot to the sauté setting and stir in the heavy whipping cream mixture and sour cream.
  6. Cook for 4-6 minutes until they are well combined and the soup as thickened.
  7. Serve warm and enjoy!
