Instant Pot Ham & Bean Soup

Instant Pot Ham & Bean Soup brings together 15 varieties of beans, a ham bone or ham hock, and a medley of vegetables slow-cooked under pressure. The long cook time softens the beans and extracts rich, savory flavor from the ham, creating a hearty, comforting soup. Including diced tomatoes added after cooking prevents interference with bean softening. It's a filling dish that can warm a crowd or provide satisfying leftovers.

Description

Instant Pot Ham & Bean Soup combines a 15-bean blend with diced onion, celery, and carrots sautéed in olive oil, slowly cooked alongside a meaty ham bone or ham hock. The cooking process uses pressure to tenderize the beans over an hour, integrating the smoky depth of the ham. The soup's flavor develops further with the addition of a bay leaf and chicken broth. Diced tomatoes are stirred in after cooking to avoid hindering the beans' hydration and soften the texture. The result is a thick, savory soup with substantial bean and ham pieces throughout.

The texture is rich and hearty due to the mix of beans and the shredded ham from the bone, offering both creamy bean softness and savory meatiness. Simmering the soup briefly after pressure cooking allows the flavors to meld and lets the ham meat rejoin the dish evenly. It’s a satisfying meal option, especially when served warm on cooler days.

For best results, remove the ham bone before shredding the meat and return it to the soup after simmering with the tomatoes. This soup accommodates extra broth or stock for a thinner consistency and can be thickened by simmering uncovered or brief blending. It pairs well with rustic bread for dipping or a side salad.

The recipe notes advise avoiding acidic ingredients like diced tomatoes during initial cooking to ensure beans soften properly. If a leftover ham bone isn't available, a ham hock with some meat serves as a good substitute. Adjust liquid levels as desired for soup thickness and allow the soup to simmer to your preferred texture.
