Instant Pot Ham Green Beans And Potatoes
Description
The recipe layers diced ham and sliced onions in the pressure cooker first, followed by fresh green beans and halved potatoes placed on top. Chicken broth or an alternative cooking liquid is poured over the ingredients. The sealed pot cooks the mixture under high pressure for 8 minutes, followed by a natural pressure release to allow flavors to meld and ingredients to become tender.
The ham imparts a smoky, salty taste, which complements the freshness of green beans and the mild starchiness of the potatoes. Cooking under pressure results in tender textures without nutrient loss or overcooking.
This dish is practical for a quick one-pot meal or wholesome side, particularly utilizing ham leftovers. The portions and cooking time accommodate smaller new potatoes, with instructions for cutting larger potatoes into manageable pieces.
Adjust potato sizes as needed to ensure even cooking, quartering larger potatoes if necessary to match the cooking time.
Ingredients
- 1-1/2 cups ham or 1 ham slice, chopped, diced
- 2 lbs Green bean trimmed, washed, and drained, fresh
- 6 - 8 potato see recipe note below, new, halved
- 1/2 onion sliced
- 1 cup chicken broth or water
- salt
- black pepper
Instructions
- Add the diced ham and sliced onions to the inner liner pot of the Instant Pot Pressure Cooker.
- Add fresh, snapped, and rinsed green beans to the Instant Pot.
- Add the quartered potatoes on top of the green beans.
- Stir to mix up the ham, green beans, and potatoes and onions.
- Pour in 1 cup of chicken broth or water over the ham, green beans, and potatoes.
- Close the lid and move the seal to the sealing position.
- Press the “Pressure Cook” button and set the Pressure level to High Pressure, and use the + or - buttons to change the time to 8 minutes. (Please note that it will take about 5 - 10 minutes to come up to pressure before it starts the 8-minute pressure cooking time.)
- After it has finished pressure cooking 8 minutes, let the pressure release naturally for 10 minutes (which means you do nothing!) and then carefully move the pressure release valve to the VENTING position, which does a quick pressure release. After the pressure has been released, and the pin dropped, carefully open the lid and spoon the Ham, Green Beans, and Potatoes into a serving bowl. Enjoy!
Notes
- Use halved new potatoes or small Yukon Gold potatoes for even cooking; quarter larger russet potatoes to ensure tenderness within the pressure cooking time.
- If potatoes are very large, consider cutting into six pieces for faster cooking.
