Instant Pot Hamburger Soup
Description
Instant Pot Hamburger Soup is a warming dish featuring browned extra lean ground beef cooked with onions, celery, and garlic, layered with tomato paste, canned diced tomatoes, beef broth, diced russet potatoes, and Italian seasoning. The ingredients are brought together in the pressure cooker to meld flavors quickly and cook the potatoes until tender. The beef provides a savory depth balanced by the acidity from the tomatoes and a touch of herbs for complexity.
The soup has a moderately thick consistency from the potatoes breaking down slightly, and the vegetables soften through pressure cooking while retaining some texture. It’s served as a straightforward and nourishing dish that works well for weekday meals, especially when a satisfying yet uncomplicated soup is desired.
Adjusting the salt and pepper at the end lets you control the seasoning. Using low-sodium broth is an option for reducing salt intake. The recipe scales with ground beef quantity, and a stovetop version is possible for those without an Instant Pot.
Ingredients
- 1/2 tablespoon olive oil
- 1/2 medium onion chopped
- 2 ticks celery chopped
- 1 pound ground beef extra lean (95% lean
- 3 cloves garlic minced
- 2 heaping tablespoons tomato paste
- 1 (28 fluid ounce) diced tomatoes with juices, canned
- 4 cups beef broth
- 2 large russet potato diced
- 1/4 teaspoon Italian seasoning or to taste
- salt to taste
- black pepper to taste
Instructions
- Add the olive oil, onion, and celery to your Instant Pot. Press the sauté button and cook for 4 minutes.
- Stir in the beef and garlic. Cook until the beef has browned, stirring occasionally (about 5 minutes). You shouldn't need to drain much fat if you're using extra lean ground beef, but feel free to drain some/most of it if desired (I didn't drain any).
- Stir in the tomato paste, then add in the diced tomatoes, beef broth, potatoes, and Italian seasoning.
- Close the lid, make sure the valve is on "sealing", and cook on high pressure for 8 minutes.
- Once the countdown has finished, do a quick pressure release.
- Season with salt & pepper as needed and serve immediately.
Notes
- This recipe serves about 4 to 6 people, making it suitable for family dinners.
- Ground beef between 1 and 1.5 pounds can be used depending on preference or availability.
- For lower sodium, use beef broth with reduced salt content to manage seasoning.
- The inactive time refers to the time Instant Pot takes to reach pressure before cooking begins.
- If an Instant Pot is not available, a similar stovetop version can be made to achieve the same soup.
