Instant Pot Honey Balsamic Drumsticks
Description
This recipe uses chicken drumsticks cooked in the Instant Pot with a sauce made from balsamic vinegar, honey, soy sauce, and minced garlic. Cooking under high pressure for 10 minutes allows the flavors to infuse and the meat to become tender. After pressure cooking, the sauce is reduced by boiling through the sauté function to concentrate its flavor and thicken into a glaze. Broiling the drumsticks briefly on each side crisps and caramelizes the exterior, enhancing texture and appearance.
The balsamic vinegar provides acidity balanced by the sweetness of honey, with soy sauce adding depth and saltiness, complemented by garlic aroma. This combination results in a sticky, flavorful coating that clings nicely to the chicken.
This dish is suitable for a main course served with rice, vegetables, or salad. Chicken can also be baked instead of pressure cooked, following a longer oven time.
Leftover drumsticks store well and can be reheated gently to maintain the glaze without drying out the meat.
Ingredients
- 8-10 chicken drumstick skin on
- 1/2 cup balsamic vinegar
- 1/4 cup honey
- 1/4 cup soy sauce
- 2 cloves garlic minced
- salt to taste
- black pepper to taste
Instructions
- In a small bowl, mix the balsamic vinegar, soy sauce, honey, and garlic
- Pour sauce in the instant pot
- Add chicken drumsticks and push them down so they are submerged in the sauce (they don't have to be completely covered in the sauce)
- Cook on high pressure for 10 minutes (MANUAL 10 MINUTES)
- When the machine beeps, let out the steam. (QUICK RELEASE)
- Hit the saute button so the sauce boils and starts reducing
- Remove the drumsticks and place them on a cookie sheet lined with parchment paper
- Broil the chicken drumsticks for 2 minutes on each side (or more if you'd like). Meanwhile, leave the sauce on the instant pot so it keeps reducing
- Remove from the oven and place the chicken drumsticks on a platter. Pour sauce over and serve
Notes
- Chicken can be baked at 375°F for 45 minutes instead of Instant Pot pressure cooking.
- Broil drumsticks for 2 minutes per side or longer for more caramelization if desired.
- Reduce the sauce on sauté mode after pressure cooking to thicken the glaze.
