Ingredients

Servings
  • 1 Tablespoon vegetable oil
  • 1 onion diced, small
  • 2 cups long grain white rice
  • 2 cups broth chicken or vegetable
  • 2 tablespoon lemon juice or juice of one lemon
  • 1 teaspoon salt
  • 1 teaspoon dill seed optional
  • lemon zest for garnish
  • dill seed for garnish

Instructions

  1. Put the Instant Pot on Saute and let it heat for 2 minutes. Then add the oil and the onion. Cook, stirring the onion until it starts to soften, about 4 minutes.
  2. Add the rice to the Instant Pot. Cook, stirring, for 2 minutes to toast the rice grains slightly.
  3. Turn the Instant Pot off.
  4. Add the broth to the Instant Pot to deglaze it. Scrape the bottom of the Instant Pot with a spoon to make sure there are no bits of onion stuck to the bottom.
  5. Add the lemon juice, salt and dill seed. Stir to mix.
  6. Put the lid on the Instant Pot, making sure the sealing ring is in place and the pressure valve is closed. Set it on Manual, high pressure for 5 minutes.
  7. It will take about 10 minutes for the Instant Pot to reach pressure. Once it has finished cooking let the pressure release naturally for at least 10 minutes. Then release any remaining pressure, stir and serve the rice.

Notes

  • I make and test my recipes in a 6 quart Instant Pot. Using a different brand or size pressure cooker might affect your results.
