Instant Pot Lentil Tacos
Description
This recipe features lentils cooked in an Instant Pot with chicken or vegetable broth, salsa, and a blend of spices including onion powder, garlic powder, chili powder, and cumin. Pressure cooking the lentils ensures they become tender and naturally absorb the flavors quickly. Once cooked, the lentil mixture is stirred gently and used as a taco filling.
The texture of the filling is soft yet slightly firm to hold together in tortillas. The combined spices and salsa provide balanced warmth, mild heat, and savory depth. The toppings like shredded cheese, diced tomatoes, fresh cilantro, green onion, avocado or guacamole, sour cream or Greek yogurt, and additional salsa or hot sauce add contrasting textures and flavors, enhancing the taco experience.
These lentil tacos are an approachable plant-based option that can be served as a meal or casual snack. Preparing the filling in one pot reduces cleanup and cooking time. The recipe yields about four cups of filling, suitable for approximately sixteen 1/4-cup servings, and pairs well with either corn or flour tortillas.
Leftovers store well and the filling can be reheated gently. Adjust toppings as desired for variety.
