Instant Pot Loaded Mashed Potatoes

Instant Pot Loaded Mashed Potatoes combine creamy mashed Yukon Gold and red potatoes cooked quickly under pressure, mixed with butter, cream cheese, sour cream, and cheddar cheese. Topped with crispy bacon, more cheddar, and chopped green onions, they offer a hearty side with a rich texture and comforting flavors. The pressure cooking speeds up the process while preserving the potatoes' natural taste.

Description

Red and Yukon Gold potatoes are quartered and placed on a steamer rack inside the Instant Pot with a cup of water beneath. Cooked on high pressure for 10 minutes, the potatoes become tender quickly. After releasing pressure and removing excess liquid, potatoes are mashed with butter, cream cheese, sour cream, kosher salt, and freshly ground black pepper. Cheddar cheese is folded into the mash for a mild sharpness and creaminess.

The mashed potatoes are served garnished with grated cheddar cheese, bacon crumbles, and chopped green onions, contributing crispness and flavor at the top. This loaded variation elevates simple mashed potatoes into a rich side dish suitable for family dinners or holiday meals.

Alternative cooking methods include slow cooker or stove-top boiling. The recipe provides flexibility depending on kitchen equipment and timing. Seasoning can be adjusted to taste for salt and pepper. Serving immediately preserves the creamy texture and toppings.
