Description
This recipe uses peeled or unpeeled sweet potatoes cut into roughly 2-inch cubes, placed with water in an Instant Pot. Pressure cooking for 14 minutes softens the sweet potatoes thoroughly. Once the pressure releases, the potatoes are drained and mashed with dairy-free butter, ground cinnamon, maple syrup, and salt to taste.
The resulting mash is smooth and flavorful, combining natural sweetness from the potatoes and maple syrup with a warm cinnamon note. The pressure cooker method reduces cooking time compared to boiling, while ensuring a consistent soft texture.
These mashed sweet potatoes can be served warm as a side dish complementing many main courses. The recipe accommodates dietary needs through the use of dairy-free butter. Peeling the potatoes is optional; unpeeled versions should be scrubbed clean beforehand.
Draining the cooking water fully before mashing helps achieve the right consistency.
Ingredients
- 2 lbs sweet potato peeled and cut into 2 inch cubes, 907g
- 1 cup water 237 ml
- 1 tsp ground cinnamon
- 2 tbsp dairy-free butter
- 2 tbsp maple syrup
- salt to taste
Instructions
- Wash, peel and quarter sweet potatoes. But, if you prefer you can skip peeling them.
- Add 1 cup of water into the Instant Pot insert, making sure it does not pass the fill line.
- Place the potatoes inside the insert, cover your Instant Pot and set the valve to the SEALING position.
- Select the Pressure Cook or Manual button (dependent upon IP model), select high pressure and set the timer to 14 minutes.
- Cook till done, then perform a complete quick pressure release.
- Carefully open the lid and remove the sweet potatoes from the Instant Pot. Make sure to drain off the cooking water.
- Place sweet potatoes in a large bowl and add the rest of the ingredients before mashing.
- Serve your Instant Pot Mashed Sweet Potatoes warm.
Notes
- Peeling the sweet potatoes is optional; you can prepare them with skins on after cleaning well.
- Scrub sweet potatoes thoroughly to avoid any grit in the mash.
- Cooking directly in the Instant Pot insert simplifies cleanup; however, using a trivet is an option if preferred.
- Drain all cooking water from the potatoes before mashing for best texture.
