Instant Pot Pork Loin with Apples and Mashed Potatoes
Description
This recipe centers on a pork loin roast seasoned with rosemary, fennel, salt, and pepper, browned in the Instant Pot using butter. After browning, sliced apples are sautéed briefly in the same pot, adding sweetness and moisture to the dish. The pork is returned atop the apples, with peeled and chopped potatoes placed in a steamer basket over the meat. Adding apple juice or cider deglazes the pot and contributes to the cooking liquid.
The Instant Pot is set to Manual mode for 15 minutes, cooking the pork, apples, and potatoes together. Following a natural pressure release, the ingredients are ready for serving, with the pork tender and flavored with fruity notes from the apples, while the potatoes become soft and ideal for mashing with butter, milk, and salt.
This method allows all components to cook simultaneously, yielding a balanced meal with pork as the centerpiece accompanied by soft mashed potatoes and flavorful apples. Using firm apples like Honey Crisp helps maintain texture and adds brightness.
The recipe was tested for a pork loin between 1 1/2 and 2 1/2 pounds; adjusting roast size may affect cooking times for even doneness. Apple juice can be substituted with chicken broth, though this lessens the apple flavor. In larger Instant Pot models, increasing the apple juice quantity is advised to maintain adequate cooking liquid.
Ingredients
- 2 Tablespoon butter
- 1 1/2 - 2 1/2 pound pork loin filet
- 2 teaspoon rosemary
- 2 teaspoon fennel
- salt to taste
- black pepper to taste
- 3 apple peeled and sliced
- 1 cup apple juice or apple cider
- 6 potato peeled and chopped, medium
- 1/4 cup butter
- 1/4 cup milk
- 1/2 teaspoon salt
Instructions
- Put the Instant Pot on Saute and melt the butter.
- Season the pork loin roast with rosemary, fennel, salt and pepper. Brown the pork loin on all sides, taking about 5 minutes.
- Peel and slice the apples while the pork browns.
- Remove the pork to a plate and add the apples. Saute for 5 minutes.
- Peel and halve the potatoes while the apples cook.
- Turn off the Instant Pot. Add the apple juice or apple cider to the Instant Pot and deglaze the pot. Scrape the bottom of the Instant Pot with a wooden spoon to make sure no browned bits of pork or apple are stuck to the bottom.
- Return the pork to the Instant Pot on top of the apples.
- Put the cut potatoes in a steamer basket and set it on a trivet over the pork.
- Put the lid on the Instant Pot. Set it for Manual mode, 15 minutes. It will take about 10 minutes for the Instant Pot to reach pressure.
- When the timer goes off let the pressure release naturally for 10 minutes. Then manually release the remaining pressure.
- Take the pork roast out and use a meat thermometer to make sure it has reached a minimum of 145 F. Set aside to rest for a few minutes.
- Put the potatoes in a bowl and mash with the butter, milk and salt.
- Use a slotted spoon to remove the apples from the Instant Pot and place them next to or on top of the pork roast.
Notes
- This recipe is designed for a 1 1/2 to 2 1/2 pound pork loin; using a different size or cut will require adjusting cooking times.
- For a more pronounced apple flavor, use apple juice or cider rather than chicken broth.
- Choose firm apple varieties, such as Honey Crisp, to keep their texture during cooking.
- In a larger Instant Pot (8 quart), increase the apple juice quantity to about 1 1/2 cups to maintain sufficient cooking liquid.
