Instant Pot Pot-in-Pot Rice (Pressure Cooker)
Description
Instant Pot Pot-in-Pot Rice (Pressure Cooker) prepares basmati rice by rinsing it, then cooking it in a separate bowl placed on a trivet inside the Instant Pot filled with water. The method uses pressure cooking for six minutes at high pressure, with a ten-minute natural pressure release to ensure fluffy, evenly cooked rice. Optional salt and ghee enhance the flavor and texture, but the step is optional. The use of a stainless steel or oven-safe glass bowl is recommended, with slightly longer cooking times if using glass.
The resulting rice features well-separated, tender grains thanks to the gentle cooking environment created by the pot-in-pot setup. This method works well when cooking rice simultaneously with an entree that requires a similar cooking time, ensuring the rice does not overcook or become mushy.
This rice is versatile as a side dish or base for many meals. Cooking with this technique helps avoid sticking or burning commonly associated with direct pressure cooking of rice. Adjusting the water ratio can provide softer rice if preferred.
Notes suggest a stainless steel bowl is best; a glass bowl adds a few minutes to cook time. The ratio of rice to water can be increased for softer rice, and timing considerations may prevent pot-in-pot rice when the entree cooks significantly longer. This recipe was developed specifically for a 6-quart Instant Pot DUO60 model.
Ingredients
- 1 cup basmati rice rinsed
- 1 cup water for cooking rice, see notes
- 1/2 teaspoon salt (optional)
- 1 tablespoon ghee optional, or oil
- 1 cup water for main pot with trivet
Instructions
- Wash the rice and drain water. Put the rice in a bowl. Add 1 cup water for cooking rice in the bowl. Optionally, Add salt and ghee/oil if you prefer.
- Add 1 cup water to the main insert of the pressure cooker. Place trivet in the main insert. Place the bowl with rice and water on the trivet.
- Close the lid of the pressure cooker with vent in sealing position. Set in pressure cook or manual mode for 6 minutes at high pressure. (Note: if using a glass bowl, cook for 9 minutes at high pressure)
- When the pressure cooker beeps, do a 10 minute Natural Pressure Release, which means release the pressure 10 minutes after the beep.
- Fluff the rice and it is ready to be enjoyed.
Notes
- Adjust water ratio to between 1:1 and 1:1.5 for softer rice according to preference.
- For pot-in-pot cooking, use a stainless steel bowl; if using glass, ensure it is oven safe and increase cook time by 3-4 minutes.
- This method pairs best with entree cook times between 5 and 12 minutes to avoid overcooking the rice.
- The recipe was created with a 6-quart Instant Pot DUO60 model; results may vary with other models or sizes.
