Instant Pot {Pressure Cooker} Ham & Penne Pasta
Description
The recipe begins by sautéing diced onion and fully cooked cubed ham in olive oil within the Instant Pot, allowing the onions to soften and the ham to warm. Minced garlic and dried herbs including parsley, basil, oregano, plus black pepper and red pepper flakes add fragrant seasoning. Chicken broth, milk, and flour are whisked together and poured in, forming a light sauce base that thickens as it cooks.
Penne pasta and thawed peas are stirred into the liquid mixture. The pressure cooker lid seals, and the pasta cooks at high pressure for eight minutes. After cooking, the pressure is released gradually to prevent overcooking. The pasta emerges tender yet firm, fully incorporated with the ham and peas.
Parmesan cheese is sprinkled on top just before serving, adding nutty richness. This dish is suitable as a main course and provides a creamy, herbaceous pasta experience convenient to prepare in a single pot.
A note mentions a stovetop one-pot version exists for those who prefer not to use a pressure cooker.
Ingredients
- 1 Tbsp olive oil
- 1/2 c. onion yellow, diced
- 3 cloves garlic minced
- 3 c. ham fully cooked, cubed
- 1/2 tsp parsley dried
- 1/2 tsp basil dried
- 1/4 tsp oregano dried
- 1/4 tsp black pepper
- 1/4 tsp red pepper flakes
- 3 c. chicken broth
- 2 c. milk 2%
- 1/4 c. flour
- 1 penne noodles 16 oz, uncooked
- 2 c. peas thawed, frozen
- 1/2 c. Parmesan Cheese
Instructions
- Place 1 Tbsp olive oil in bottom of Instant Pot. Turn on to manual. Saute ham and onions until onions are translucent. Add garlic, parsley, basil, oregano, pepper and red pepper flakes; cook 1-2 minutes.
- Stir in broth, milk, and flour. Whisk until combined. Add the rest of the ingredients except Parmesan cheese.
- Place lid on Instant Pot.
- Set to high pressure for 8 minutes.
- After it is done, let the pressure naturally release for about five minutes, and then change to quick release until all the pressure is gone.
- Sprinkle Parmesan cheese on top of pasta. Serve immediately.
Notes
- Use fully cooked ham cubed for easy heating and flavor infusion.
- After pressure cooking, allow a natural pressure release for about 5 minutes before quick release to avoid overcooked pasta.
- Parmesan cheese added just before serving adds richness and balances the herbaceous sauce.
- The recipe can be adapted for stovetop one-pot cooking for those without a pressure cooker.
