Description
"Instant Pot Pulled Pork" begins with browning pork shoulder pieces in vegetable oil using the Instant Pot’s sauté function to develop surface flavor. The pork is then pressure cooked with water and hickory smoke flavoring, breaking down tough fibers over 75 minutes of high pressure and natural release.
The resulting meat becomes tender enough to shred easily with forks. After discarding excess fat, the shredded pork is combined in the pot with barbecue sauce and some reserved cooking liquid, warmed through for a moist, flavorful filling suitable for buns or other serving options.
This method provides a relatively hands-off way to make tender pulled pork with smoky and barbecue notes in under two hours, skipping slow cooking or oven roasting.
Choosing pork shoulder is key for moisture and texture because its marbled fat renders during cooking. Leftovers keep well refrigerated for three to four days.
Ingredients
- 2 Tbsp vegetable oil
- 3-4 lb pork shoulder cut in half, boneless
- ½ tsp salt
- ½ tsp black pepper ground
- ½ c. water
- 1 tsp hickory smoke flavor
- 1 c. barbecue sauce
- Buns additional BBQ sauce of topping, optional
Instructions
- Select the saute function on the Instant Pot to preheat the pot. When the pot is hot add vegetable oil to it. Place pork in pot and brown on all sides, about 3 minutes per side.
- Add water and hickory flavored smoker to cooking pot.
- Place lid on in lock position and make sure the valve is turned to closed. Select High Pressure for 75 minutes.
- When the cook time ends, let it naturally release for 20 minutes.
- After 20 minutes let any remaining pressure out of Instant Pot be turning the valve to open.
- Remove pork from the pot and shred with two forks, discard excess fat as your shred.
- Strain liquid from pot, reserving ½ c. of liquid. Place shredded pork in the cooking pot with 1 c. of barbecue sauce and reserved liquid. Stir to combine. Set Instant Pot to saute to warm the mixture up; stirring frequently.
- Serve on buns with additional barbecue sauce if desired.
Notes
- Use pork shoulder or pork butt for best texture and flavor due to their fat content.
- Leftover pulled pork can be refrigerated safely for up to four days.
