These spices coat pork shoulder pieces that are first browned in the Instant Pot to develop a crust and deepen flavor.

For the spice rub

  • 2 tablespoons brown sugar
  • 2 teaspoons paprika sweet
  • 1 teaspoon smoked paprika
  • 1 teaspoon black pepper
  • 2 teaspoons kosher salt
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/4 teaspoon mustard powder
  • 1/4 teaspoon cayenne pepper optional

For the pulled pork

  • 3 1/2 pounds pork shoulder cut into 3 or 4 pieces
  • 2 tablespoons vegetable oil
  • 3/4 cup chicken broth
  • 2 cups BBQ sauce divided use

Instructions

For the spice rub

  1. Place all of the spice rub ingredients in a small bowl and stir to combine.

For the pulled pork

  1. Turn the Instant Pot to Saute mode and add the oil the pot.
  2. Place the pieces of pork in the pot in a single layer; you may need to work in batches.
  3. Cook the pork for 3-4 minutes per side or until golden brown. Remove the pork from the pot and turn off Saute mode.
  4. Sprinkle the spice rub all over the pork pieces.
  5. Place 3/4 cup of chicken broth and 1 cup of BBQ sauce in the Instant Pot; whisk to combine.
  6. Return the pork pieces to the pot. Seal the pot and set to manual high pressure for 60 minutes.
  7. After the cooking time has finished, let the pressure release naturally for 15 minutes, then manually release the pressure.
  8. Remove the top of the pot. Remove the pork from the pot and use two forks to shred the meat. Mix the remaining cup of BBQ sauce into the shredded pork, then serve.
