Description
Instant Pot Pulled Pork starts with a flavorful dry rub combining brown sugar, sweet and smoked paprika, black pepper, kosher salt, garlic powder, onion powder, mustard powder, and optional cayenne pepper. These spices coat pork shoulder pieces that are first browned in the Instant Pot to develop a crust and deepen flavor.
The pork then cooks under high pressure with chicken broth and part of the BBQ sauce, producing a moist, tender meat that easily shreds with forks. After shredding, the pork is combined with the remaining BBQ sauce for a balanced, saucy finish.
This pulled pork is well suited for sandwiches, tacos, or plates with sides. The pressure cooking reduces long cooking times while producing a texture that is soft yet structured. The spice rub adds a mild heat and smokiness without overpowering the meat.
Ingredients
For the spice rub
- 2 tablespoons brown sugar
- 2 teaspoons paprika sweet
- 1 teaspoon smoked paprika
- 1 teaspoon black pepper
- 2 teaspoons kosher salt
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/4 teaspoon mustard powder
- 1/4 teaspoon cayenne pepper optional
For the pulled pork
- 3 1/2 pounds pork shoulder cut into 3 or 4 pieces
- 2 tablespoons vegetable oil
- 3/4 cup chicken broth
- 2 cups BBQ sauce divided use
Instructions
For the spice rub
- Place all of the spice rub ingredients in a small bowl and stir to combine.
For the pulled pork
- Turn the Instant Pot to Saute mode and add the oil the pot.
- Place the pieces of pork in the pot in a single layer; you may need to work in batches.
- Cook the pork for 3-4 minutes per side or until golden brown. Remove the pork from the pot and turn off Saute mode.
- Sprinkle the spice rub all over the pork pieces.
- Place 3/4 cup of chicken broth and 1 cup of BBQ sauce in the Instant Pot; whisk to combine.
- Return the pork pieces to the pot. Seal the pot and set to manual high pressure for 60 minutes.
- After the cooking time has finished, let the pressure release naturally for 15 minutes, then manually release the pressure.
- Remove the top of the pot. Remove the pork from the pot and use two forks to shred the meat. Mix the remaining cup of BBQ sauce into the shredded pork, then serve.
