Instant Pot Pulled Pork Tacos Recipe

Report
This recipe delivers tender pulled pork cooked in an Instant Pot with salsa, taco seasoning, and water. The pork loin slowly cooks under pressure, absorbing the spices and salsa to create a flavorful, juicy filling perfect for tacos. A squeeze of fresh lime adds brightness before serving, making these tacos lively and well-balanced. The shredding step creates a texture that’s easy to pile in tortillas and top as desired.

Description

Instant Pot Pulled Pork Tacos are made by pressure cooking pork loin with salsa and taco seasoning, resulting in a tender, juicy meat ideal for tacos. The pork is placed in the pot with water and seasonings, sealed, and cooked under high pressure for 45 minutes, which softens the meat thoroughly. After a quick release of pressure, the pork is shredded and mixed with the cooking juices to keep it moist and flavorful. A final addition of freshly squeezed lime juice brightens the dish slightly.

The slow pressure cooking infuses the pork with the salsa’s tang and taco spices, creating a harmonious blend of tastes. The texture becomes tender enough to easily shred, making it ideal for assembling simple, casual tacos with toppings like onions, cilantro, or cheese.

This method simplifies traditional slow cooking, reducing the wait time while enhancing the pork’s ability to soak up seasoning. The recipe is convenient for those looking to enjoy slow-cooked pulled pork with minimal hands-on time and straightforward ingredients.
