Instant Pot Quinoa

This Instant Pot Quinoa recipe cooks quinoa to tender perfection using a "zero-minute" pressure method and optional toasting for added aroma. Using chicken stock or water and a small amount of olive oil, it results in fluffy, well-separated grains. The process leverages the heat during pressure buildup and natural release to evenly cook the quinoa, offering a convenient and consistent method for preparing this versatile grain.

Description

The recipe begins with rinsing quinoa to remove bitterness, then optionally toasting it in olive oil in the Instant Pot to enhance flavor and aroma. After adding salt and chicken stock or water, the mixture is cooked at high pressure for zero minutes, relying on the pressure buildup and natural pressure release to cook the grains thoroughly without overcooking. This method requires no active timing, just setting the cooker and waiting.

The cooked quinoa has a light and fluffy texture, with grains that separate nicely and a delicate nutty flavor, suitable as a base for salads, side dishes, or incorporating into entrees. The use of unsalted chicken stock allows for controlled seasoning.

The recipe can be doubled using the same cooking time. If the Instant Pot cannot set zero minutes, instructions include setting one minute and cancelling after pressure build-up to mimic the zero-minute method, ensuring versatility with different cookers.

Ingredients

Servings
  • 1 cup (190g) quinoa
  • 1 cup (250ml) chicken stock unsalted or cold water
  • ¼ teaspoon salt fine
  • 1 tablespoon (15ml) olive oil

Instructions

  1. Rinse Quinoa: Most packaged quinoa has been pre-rinsed to remove the saponin to reduce the bitterness. If necessary, give it a quick rinse with cold water, then drain really well to avoid throwing off the "Water to Quinoa Ratio".
  2. Optional Flavor Aroma Boosting - Toast Quinoa: Press Saute button on Instant Pot, then wait 1 minute. Pour in 1 tbsp (15ml) olive oil, then add quinoa in Instant Pot. Toast quinoa until fragrant (~2 to 3 mins).
  3. Pressure Cook Quinoa: Add ¼ tsp fine salt and 1 cup (250ml) unsalted chicken stock or cold water in Instant Pot. Use a wooden spoon to scrub the bottom to make sure no quinoa is stuck to the bottom. With Venting Knob in Venting Position, close the lid, then turn Venting Knob to Sealing Position. Pressure Cooking Method:Toasted Quinoa: Pressure Cook at High Pressure 0 (zero) minute, then Natural Release for 10 minutes.Non-Toasted Quinoa: Pressure Cook at High Pressure 0 (zero) minute, then Natural Release for 12 minutes. After natural releasing, turn the Venting Knob to the Venting position to release the remaining pressure. Open the lid carefully.
  4. Serve Quinoa: Fluff quinoa & serve. You can use quinoa as a side dish, toss into your salads or soups. Enjoy~

Notes

  • Using the "zero-minute" pressure cook method cooks quinoa evenly by utilizing pressure build-up and natural release stages.
  • You can double the recipe quantity without adjusting cooking time.
  • Prefer pre-rinsed white quinoa to reduce bitterness; rinse further if needed.
  • Use unsalted chicken stock to control the dish's sodium level, adjusting seasoning afterward if using salted stock.
  • If your Instant Pot can't set zero minutes, set 1 minute on high, then cancel and release pressure naturally.
