Instant Pot Ribs

This recipe uses an Instant Pot to cook baby back pork ribs marinated in a flavorful paste made with onion, garlic, ginger, chili flakes, and seasoning. After marinating, the ribs are pressure cooked with stock for tenderness, then optionally broiled to add a browned finish. Description

Instant Pot Ribs start with preparing a paste by blending onion, garlic, grated ginger, chili flakes, and all-purpose seasoning with vegetable oil. The ribs are rubbed with this paste and left to marinate for about an hour, allowing the flavors to permeate the meat. Using the Instant Pot’s pressure cooking function with added stock cooks the ribs until tender in about 20 minutes of high pressure plus additional time for natural pressure release.

The cooking method produces tender, juicy ribs infused with the marinade’s aromatic spices and chili heat. After pressure cooking, the ribs can be broiled briefly to develop a browned, caramelized surface that adds texture and deeper flavor.

These ribs can be served as a main dish alongside sides of choice. The recipe allows for an alternative grilling method that involves indirect heat, though the Instant Pot version is the primary focus here.

Note that total preparation time includes marinating and natural pressure release phases, so plan accordingly. Increasing serving size will alter nutritional points if tracking diet. The optional broiling step is recommended to enhance flavor and appearance.

Ingredients

  • 1 onion large
  • 4 cloves garlic
  • 2 tablespoons ginger grated
  • 1 teaspoon dried chili flakes or to taste
  • 2 teaspoons SEASONING all purpose
  • 2 tablespoons vegetable oil
  • salt to taste
  • 2.2 pounds pork ribs baby back ribs

Additional ingredient for Instant Pot version ONLY:

  • 1 cup stock or water

Instructions

Instant Pot instructions:

  1. Put all the ingredients (except the pork ribs, salt and stock) in a blender and whiz them into a paste.
  2. Taste paste for salt and adjust as necessary.
  3. Put pork ribs on a baking tray and rub paste all over them.
  4. Cover and leave to marinate for about 1 hour.
  5. Add trivet to bottom of inner pot of Instant Pot. Add pork ribs on top of trivet, then add stock to inner pot.
  6. Lock the lid, turn valve to sealing position, select manual pressure / high pressure (dependent upon Instant Pot model), and set to 20 minutes.
  7. When cook time ends, turn the Instant Pot off and let the pressure release naturally before opening the pot and removing the ribs.
  8. Optional but highly recommended: After removing the ribs from the Instant Pot, broil them for 5 minutes (or to your preference) on a baking tray to give them color.
  9. Let the ribs rest for a few minutes and serve.

Grill instructions:

  1. Light the barbeque to medium heat.
  2. You will cook the ribs indirectly. This means that you move the coals to one side and put the ribs on the other side.
  3. Put the ribs into the bbq, but not directly over the coals, and then cover the bbq. If you have a thermometer for your bbq it will be between 210 degrees F and 300 degrees (100 degrees C and 150 degrees C).
  4. Check the ribs after about 20 minutes. The meat should be just beginning to pull away from the ends of the bones. If the ends nearest the coals are starting to get dark brown or black, turn over the ribs. If not, give them another 10 minutes.
  5. Turn over the ribs and continue to cook for another 20 minutes.
  6. At this stage have a look at the ribs and cut into the middle of them. There should be no blood. If there is, cook for a little longer.
  7. Take off the bbq and let the ribs rest for at least 10 minutes then serve.

Oven instructions:

  1. Put all the ingredients (except the pork ribs and salt) in a blender and whiz them into a paste.
  2. Taste paste for salt and adjust as necessary.
  3. Put pork ribs on a baking tray and rub paste all over them.
  4. Cover and leave to marinate for about 1 hour.
  5. Pre heat oven to 325 degrees F / fan assisted 170 degrees C / 180 degrees C / gas 3.
  6. Cook pork uncovered for about 40 minutes or until it starts pulling of the bone.
  7. Remove from oven, let it rest for a few minutes, and serve.

Notes

  • Allow about 1 hour for marinating the ribs with the spice paste before cooking.
  • Total cooking time excludes pressure buildup and natural pressure release; plan for additional time.
  • After pressure cooking, broil the ribs for about 5 minutes to develop color and texture.
  • Adjust seasoning salt in the paste after tasting before applying it to the ribs.
