Instant Pot Ribs

Instant Pot Ribs use baby back ribs rubbed with Memphis dry seasoning, cooked under high pressure with water and apple cider vinegar, then finished under the broiler with BBQ sauce. This method results in tender, flavorful ribs with a caramelized sauce crust. The pressure cooking speeds up the tenderizing process while the broiler adds a final glaze and slight crispness. The ribs are easy to prepare and serve with extra BBQ sauce.

Description

This recipe begins by removing the silverskin from the baby back ribs to improve tenderness. The ribs are then coated with a dry rub that imparts a savory and spiced flavor. Placing the ribs on a trivet inside the Instant Pot prevents them from sitting in liquid, allowing pressure cooking to evenly tenderize the meat.

Water and apple cider vinegar provide the necessary liquid to build pressure and add a slight tanginess to the ribs. The ribs cook under high pressure for 25 minutes, and a natural pressure release ensures they retain moisture and tenderness. After pressure cooking, the ribs are brushed generously with BBQ sauce and broiled for 10 minutes; this step caramelizes the sauce, creating a sticky, flavorful exterior.

The finished ribs have tender meat that easily pulls away from the bone with a flavorful crust from the dry rub and BBQ glaze. Additional BBQ sauce can be served alongside. This approach allows for a relatively quick preparation of ribs usually requiring long slow cooking.

  • 1 rack baby back ribs
  • 4 tablespoons Memphis Dry Rub
  • 1 cup water
  • ¼ cup apple cider vinegar
  • ¼ cup BBQ sauce

Instructions

  1. Prepare the ribs by removing the silverskin (see instructions in post above).
  2. Rub the dry rub into the ribs on both sides.
  3. Pour the water and apple cider vinegar into the pot of the Instant Pot.
  4. Place your trivet in the pot and the place your ribs on top of the trivet. The ribs should curl into the pot with the meat side facing out so that it presses against the inside of the pot.
  5. Lock the lid in place and turn the valve to SEALING. Set to HIGH pressure for 25 minutes.
  6. When the timer goes off let it do a full natural release (when the pin drops on top you know it is done).
  7. While it is naturally releasing preheat your oven broiler.
  8. When the natural release has finished unlock the lid and remove your ribs, placing them on a baking sheet.
  9. Brush your BBQ sauce over the top of your ribs and then place in the oven for 10 minutes. This will caramelize your sauce.
  10. Serve with extra BBQ sauce and enjoy!
