Instant Pot Ribs
Description
The ribs are placed on sliced onions in the Instant Pot to prevent sticking and add subtle flavor. They are seasoned simply with salt and black pepper, then coated with a homemade barbecue sauce combining acidic, sweet, and savory ingredients including cider vinegar, brown sugar, garlic, ketchup, chili sauce, Worcestershire sauce, onion, lemon juice, mustard powder, and a dash of cayenne for a gentle kick.
Pressure cooking at high for 35 minutes breaks down connective tissues, tenderizing the meat quickly compared to slow cooking. A 5-minute natural pressure release continues gentle steaming before quick releasing remaining pressure. This leaves ribs juicy and easy to pull apart. The ribs are ready for serving right from the pot.
If ribs are not tender enough after initial cooking, an additional 5 minutes of high-pressure cooking can be applied for softer texture. This flexibility helps achieve preferred tenderness consistently.
For extra tender ribs, add 5 more minutes of high pressure if initial cooking isn’t sufficient.Placing ribs on onion slices prevents sticking and adds flavor during pressure cooking.
Ingredients
Barbecue Sauce
- 1/2 cup cider vinegar
- 1/3 cup brown sugar
- 1/2 teaspoon garlic minced
- 1/2 cup ketchup
- 1/4 cup chili sauce
- 1/4 cup Worcestershire sauce
- 2 tablespoons onion chopped
- 1 tablespoon lemon juice
- 1/2 teaspoon mustard powder dry
- dash cayenne pepper
Other Ingredients
- 1 onion sliced
- 4 pounds pork spare ribs boneless
- 2 teaspoons salt
- 1 teaspoon black pepper
Instructions
- In a small bowl, combine the sauce ingredients. Mix well. Set aside.
- Place the sliced onion in the bottom of the inner pot.
- Place the pork ribs on top of the onion slices.
- Sprinkle salt and pepper over the pork ribs.
- Pour the sauce overtop the pork ribs.
- Place the lid on the Instant Pot and turn it to seal the pot. Make sure the vent is closed.
- Set the Instant Pot to manual setting, on high pressure. Set the time to 35 minutes and allow it to do its work!
- When the timer goes off, allow the Instant Pot to sit and naturally release pressure for 5 minutes. This will allow the pork to steam just a little bit longer.
- After 5 minutes, flip the vent to release so the pressure quick releases.
- Once the pot stops whistling and steaming, open the Instant Pot. The pork is ready to serve!
Notes
- If the ribs are not tender enough, set the Instant Pot for an additional 5 minutes on high pressure to increase tenderness.
- Slicing onions and placing them beneath the ribs helps prevent sticking and adds flavor during cooking.
