Instant Pot Salisbury Steak
Description
The Instant Pot Salisbury Steak recipe combines ground beef mixed with egg yolk, panko, milk, and seasonings to form beef patties that are browned for flavor. Sliced mushrooms and onions form a flavorful base in the Instant Pot, topped with the beef patties. A sauce made with beef broth, brown gravy mix, tomato paste, Dijon mustard, Worcestershire sauce, and fresh parsley is poured over the patties before cooking them under pressure to meld flavors and tenderize the meat.
After cooking, the patties are removed, and a cornstarch and water mixture is stirred into the cooking liquid while using the sauté function to thicken the gravy. The beef patties are returned to coat with rich, thickened gravy that carries savory, tangy, and earthy mushroom notes. This dish pairs well with mashed potatoes or rice for a classic home-style meal.
While it's possible to brown the patties directly in the Instant Pot using sauté mode, many find it easier and less time-consuming to brown them in a skillet beforehand.
Ingredients
- 8 ounces mushrooms sliced
- ½ onion sliced
- 1 ½ cups beef broth low sodium
- 1 ounces brown gravy mix 1 packet, dry
- 1 tablespoon tomato paste
- 1 tablespoon Dijon mustard
- 2 tablespoons parsley chopped, fresh
- 1 tablespoon Worcestershire sauce
- 2 tablespoons cornstarch
- 4 tablespoons water
Beef Patties
- 1 ½ pounds ground beef lean
- 1 egg yolk
- ⅓ cup panko bread crumbs
- 3 tablespoons milk
- salt to taste
- black pepper to taste
Instructions
- Place onions and mushrooms in the bottom of the Instant Pot.
- Combine beef patty ingredients and form 6 patties. Brown over medium high heat (about 3 minutes per side) in a skillet. *see note
- Layer beef patties over mushrooms. Combine remaining ingredients except water and cornstarch. Pour over beef and cook high pressure, 18 minutes.
- Quick release. Remove patties and set aside.
- Turn IP onto sautee. Combine cold water and cornstarch. Stir into the broth and let cook a few minutes until thickened. Add beef back into the sauce to coat.
- Serve over mashed potatoes or rice.
Notes
- Browning beef patties in batches of two using the sauté function is possible, but using a skillet is often easier and faster.
- Serve over mashed potatoes or rice to soak up the flavorful gravy.
