Instant Pot Shrimp Boil

Easy shrimp boil made in the pressure cooker. Loaded with potatoes, sausage, corn on the cob and shrimp that's tossed in a Old Bay seasoned butter!

Ingredients

  • 1 ½ pounds red potatoes baby
  • 12.8 ounce andouille sausage thinly sliced, smoked, package
  • 4 teaspoons Old Bay seasoning divided
  • 3 ears corn halved
  • 12 ounce Pilsner beer or lager beer
  • 1 pound Shrimp peeled and deveined, medium, raw
  • ¼ cup butter melted
  • 3 cloves garlic minced
  • 1 Tablespoons parsley chopped fresh leaves
  • 1 lemon cut into wedges

Instructions

  1. Clean potatoes and place on the bottom of the Instant pot with sausage slices, 3 teaspoons Old Bay seasoning and garlic. Stir until well combined.
  2. Place corn on top of sausage and potatoes and pour beer into Instant Pot.
  3. Select manual high setting and set time for 5 minutes. When finished cooking, perform a quick-release.
  4. Add shrimp to Instant Pot, select manual high setting and set time to 2 minutes. When finished cooking, perform a quick-release.
  5. Combine butter and remaining 1 teaspoon Old Bay seasoning in a small bowl.
  6. Remove mixture from Instant Pot and place on serving plate or in a bowl, without liquid from Instant Pot and drizzle melted butter mixture over the top.
  7. Garnish with parsley and lemon if desired.
  8. Serve immediately.
