Ingredients
Seasoning Blend
- 1 Tablespoon brown sugar
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion minced
- 1/4 teaspoon cayenne pepper optional or adjust to taste
Pork Chops
- 4 pork chops 1-inch thick, bone-in
- 1 tablespoon neutral cooking oil generic cooking oil
- 1 cup chicken broth
- 1 Tablespoon Worcestershire sauce
Gravy
- Liquid in Instant Pot after cooking pork chops
- 2 Tablespoons water cold
- 2 Tablespoons cornstarch
- 1/3 cup sour cream (optional)
Instructions
Seasoning Blend
- In a small bowl stir together the ingredients for the seasoning.
Pork Chops
- Season The Pork Chops. Sprinkle the seasoning mix on evenly over each pork chop. Turn the pork chops and sprinkle the seasoning mix evenly on the other side of each pork chop as well.
- Brown The Pork Chops. Plug in the Instant Pot and press the Sauté button. When the Instant Pot is hot, add about 1 Tablespoon oil to the bottom of the inner pot of the Instant Pot. Using tongs, place the seasoned pork chops in the oil of the inner pot and cook for about 3 minutes. Turn the pork chops and cook for another 3 minutes.
- Pressure Cook The Pork Chops. Remove the pork chops and place on a plate until ready to return to the instant pot.Pour in the chicken broth and Worcestershire sauce. Scrape any brown bits from the bottom of the pan. Add the browned pork chops back into the Instant Pot. If cooking onions, bell peppers, or mushrooms, add them to the Instant Pot now. Pressure cook the pork chops for 15 minutes for thick bone-in pork chops. NOTE: It takes about 8 minutes for the pressure cooker to come up to pressure before the 15 minutes starts.
- Natural Release. Let the pressure release naturally for 10 minutes and then do a quick release. Remove the pork chops and vegetables from the Instant Pot and place on a plate.
Gravy
- Heat The Broth. After the pork chops, and any vegetables, have finished cooking and have been removed from the Instant Pot, press cancel, and then press sauté. This will heat the liquid in the Instant Pot.
- Thicken The Sauce. To thicken the sauce, mix 2 Tablespoons of cornstarch with cold water until the cornstarch is dissolved. Then pour the cornstarch water into the Instant pot and stir until even combined. Continue heating and stir occasionally until the gravy is thickened.
- Make Gravy Creamier. Press cancel to turn off the Instant Pot. Remove the inner pot. If you want a creamier gravy, add 1/3 cup sour cream to the gravy.
- Serve with Pork Chops. Pour the gravy over the pork chops to serve.
Notes
- Serve with mashed potatoes, steamed broccoli, Brussels sprouts, sweet potatoes, or roasted potatoes for a complete meal.
- Total cooking time is about 33 minutes: 8 minutes to pressure, 15 minutes cooking, and 10 minutes natural release.
