Description
The steak preparation starts with a dry rub of simple spices to add savory flavor layers without overwhelming the meat. Searing each side in the Instant Pot's sauté mode produces a light crust that locks in juices and enhances taste.
After searing, water is added and the pot is deglazed by scraping the browned bits off the bottom to avoid the burn notice during pressure cooking. The steaks are placed on a trivet to keep them out of the liquid as they cook under pressure.
Depending on preference, steaks can be pressure cooked from as little as 3 minutes for medium rare up to 12 minutes for well done. Resting the steak after cooking for about 5 minutes lets the juices redistribute for a juicier bite.
Leftover steaks can be refrigerated up to 4 days. The recipe accommodates various steak cuts and allows seasoning variations like Montreal spice blend to suit different tastes. The Instant Pot typically reaches pressure in about 5 minutes, which should be accounted for in total cooking time.
Ingredients
- 2 steaks
- ½ tsp black pepper ground
- ½ tsp garlic powder
- ½ tsp paprika
- ¼ tsp salt sea salt
- ¼ tsp onion powder
- 2 tbsp olive oil
- 1 cup water
Instructions
- First, combine all seasonings in a small bowl.
- Pat steaks dry with paper towels. Rub seasonings all over both sides of steaks.
- Press sauté on Instant Pot. Add olive oil to pot.
- Once oil is hot, place steaks in pot. Sear for 1 to 2 minutes on each side.
- Press cancel. Use tongs to remove steak from pot onto plate.
- Pour 1 cup water down into pot and scrape bottom of pot with wooden spoon to deglaze it.
- Place trivet inside pot. Place steaks on top of trivet.
- Secure lid and turn vent to sealing. Pressure cook on high for 3 minutes for medium rare, up to 12 minutes for well done.
- When timer goes off, carefully turn valve to venting and manually release pressure.
- Finally, carefully remove steaks from pot. Allow steaks to rest for 5 minutes before slicing into to lock in those juices.
Notes
- Use ribeye, sirloin, or any preferred steak cut; seasoning can be customized with mixes like Montreal seasoning.
