This recipe quickly steam-cooks a mix of broccoli, cauliflower, carrot, and green beans in an Instant Pot. The vegetables are cut into similar sizes to ensure even cooking, and the steaming delivers tender, brightly colored vegetables with minimal loss of nutrients. Description

The Instant Pot is filled with water and a steamer basket holds the mixed vegetables above the water level. The lid is sealed to pressure steam the vegetables for zero minutes on high pressure, which effectively uses the pot's time to come to pressure and steam the vegetables without overcooking. For softer vegetables, the steaming time can be increased to one minute.

Cutting the broccoli, cauliflower, carrots, and green beans into even, small pieces ensures that the vegetables cook uniformly and finish at the same time. Quick pressure release stops the cooking immediately when the pot beeps, preserving texture and color.

The steamed vegetables make a simple, nutritious side to complement a variety of meals and can be seasoned simply with salt and pepper to taste.

  • 1 cup broccoli cut in equal size florets
  • 1 cup cauliflower cut in equal size florets
  • 1/2 cup carrot sliced to small pieces
  • 1/2 cup green beans cut in 2 inch pieces or whole
  • 1 cup water for instant pot

Instructions

  1. Add water to the instant pot insert. Place the steamer basket in the instant pot insert.
  2. Spread the veggies on the steamer basket. Close lid with vent in sealing position.
  3. Start the instant pot and set it on Steam mode for 0 minutes on high pressure. (Note: if you like softer vegetables, increase cooking time to 1 minute)
  4. When the instant pot beeps, quick release the pressure manually. Remove the steamer basket carefully as it is hot.
  5. Season with salt, pepper and enjoy!
