Description
This recipe uses an Instant Pot to cook steel cut oats alongside milk, water, ground cinnamon, vanilla bean paste, honey, and a pinch of salt. The oats pressure cook for 4 minutes and then naturally release steam for 20 minutes, resulting in a creamy texture without constant stirring. The mixture is stirred after cooking to incorporate any settled ingredients.
The flavor combines the nutty chew of steel cut oats with warm cinnamon and vanilla notes, typical of comforting oatmeal preparations. The creamy base from milk adds richness alongside the subtle sweetness from honey or maple syrup.
Serve the oats warm, topped with fresh berries, peanut butter, bananas, or raisins according to preference. Leftovers store safely in the refrigerator for up to five days and can be reheated with added milk to loosen the consistency.
Adaptations include using alternative milks or switching to rolled oats with a higher liquid ratio while maintaining the same cooking time and method.

- 1 1/2 cups milk

Instructions
- Pour the milk, water, oats, honey, vanilla bean paste, cinnamon, and salt into the Instant Pot.
- Stir to mix.
- Secure the lid, be sure the valve is set to the sealing position. Plug in the Instant Pot and press the "pressure cook" button and set it to HIGH pressure for 4 minutes.
- Once the Instant Pot beeps, let the oats sit for an additional 20 minutes (this is called the natural release method, the time on the Instant Pot will count up).
- Switch the top knob to venting and let any extra steam release, there might not be any steam left. The pin on the lid will drop.
- Remove the lid and use a wooden spoon to stir. Spoon into bowls and top with your favorite oatmeal toppings. Enjoy!
Notes
- Use your preferred type of milk; whole milk adds creaminess but others will work.
- Leftover cooked oats can be refrigerated up to five days and reheated with extra milk to loosen.
- If using rolled oats instead of steel cut oats, increase the liquid to a 2:1 ratio and use the same cooking time.
