Instant Pot Steel Cut Oats

Instant Pot Steel Cut Oats combine steel cut oats, water, almond milk, cinnamon, salt, and optional coconut oil into a creamy, tender porridge made conveniently under pressure. The oats develop a soft but slightly chewy texture typical of steel cut oats, with subtle warmth from cinnamon. This recipe suits those looking for a hands-off way to prepare hearty oatmeal with flexibility in toppings and liquid consistency.

Description

The Instant Pot Steel Cut Oats recipe uses a blend of steel cut oats, water, and almond milk along with a hint of cinnamon and salt to create a gently flavored, creamy dish. Cooking under high pressure for a short time and then allowing a natural pressure release produces oats that are soft with a slightly chewy bite. Coconut oil can be added for smoothness and richness but is optional. After cooking, stirring and adjusting the consistency with extra liquid is recommended as the oats thicken when cooling.

The dish provides a warm and filling breakfast base that you can customize with your preferred toppings such as fruits, nuts, or sweeteners. It's a good option for meal prepping since leftovers keep well in the fridge for several days.

You can store leftovers in an airtight container and refrigerate for up to 5 days, reheating while adding liquid to loosen if they become too thick. The natural pressure release step helps avoid overly mushy oats and improves texture.

Ingredients

Servings
  • 2 cups steel cut oats
  • 4 cups water
  • 2 cups almond milk unsweetened
  • ½ teaspoon cinnamon
  • ½ teaspoon salt
  • 1 tablespoon coconut oil optional
  • Toppings of choice

Instructions

  1. Place the oats, water, almond milk, cinnamon, salt, and coconut oil, if using, in a 6-quart Instant Pot and stir to combine.
  2. Place the lid on and move the valve to sealing. Press pressure cook and set the timer to 4 minutes high pressure. You’ll notice the Instant Pot will start to come to pressure first and then the timer will begin. It can take 8-10 minutes to come to pressure.
  3. When the cook time is up, let the pressure release naturally for 10 minutes, then do a quick release for any remaining pressure. Carefully open and remove the lid.
  4. Stir the oats and add more water or milk if the mixture looks too thick, keeping in mind that they will continue to thicken as they cool. Serve immediately with your favorite toppings.

Notes

  • Store leftover oats in an airtight container in the refrigerator for up to 5 days.
  • Reheat leftovers gently with added water or almond milk to adjust thickness.
