Instant Pot Sweet Potatoes

Ingredients

  • 1 cup water
  • 6 medium sweet potato scrubbed clean
  • salt to taste, flaky salt and ground pepper
  • black pepper to taste, flaky salt and ground pepper
  • Optional fresh thyme

Instructions

  1. Pour the water into your Instant Pot and add in the insert. Arrange the potatoes over the insert.
  2. Cook on high pressure for 20-30 minutes (depending on the size of your potatoes, mine were medium and 20 min was enough). Once the time is up, allow the pot to naturally release the pressure.
  3. Once the potatoes have cooled enough to handle, slice them lengthwise and season to taste and garnish with fresh thyme.

Notes

  • Store cooked sweet potatoes in an airtight container or bag in the refrigerator for up to 5 days. You can also freeze them in a freezer-safe container for up to 12 months. Thaw overnight in the fridge before reheating.
  • Reheat in the microwave until warmed through.
