Instant Pot Taco Pasta

Taco Pasta in the Instant Pot is one my family's new favorite dinner meals. With simple ingredients and quick cook time you can get dinner on the table so fast.

Ingredients

  • 1 macaroni pasta 16 oz, box
  • 1 lb ground beef 80/20 (lean to fat ratio
  • 1 TBSP olive oil
  • 1 corn 12 oz, frozen, bag
  • 1 15 oz black beans drained and rinsed, canned
  • 1 15 oz Kidney Beans drained and rinsed, can
  • 1 14 oz fire-roasted tomato canned
  • 1 yellow onion diced, small
  • 1 green bell pepper diced
  • 1 jalapeño diced, seeds removed
  • 1 Tbsp. garlic minced
  • 1 6 oz tomato paste canned
  • 1 taco seasoning packet
  • 2 C Mexican blend cheese shredded
  • 1 C water

Instructions

  1. Remove the Instant Pot bowl and drizzle olive oil in it.
  2. Return the bowl to the Instant Pot and select saute'
  3. This will allow the oil in the Instant Pot to heat up.
  4. Add the beef, onion, and garlic to the bowl and cook for about 10 minutes. (Or the meat no longer is the color pink)
  5. Begin by adding the water, macaroni, tomato paste, and tomatoes.
  6. Stir to mix.
  7. Next add peppers, chilies, black beans, kidney beans, taco seasoning salt and pepper to the bowl.
  8. Stir well to combine all of the ingredients.
  9. Place the lid on and set to seal.
  10. Select the High-Pressure setting the timer to cook for five minutes.
  11. After the end of the five minutes, release pressure.
  12. Then carefully remove the lid.
  13. Stir in the frozen corn and cheese.
  14. Select sauté and cook until the corn is warm and the cheese is melted.
  15. Add the jalapeno and more cheese to the top of the pasta.
  16. Garnish with green onions.
  17. Makes 4 servings.
