Ingredients
- 1 pound ground beef

- 2 cups beef broth low sodium
- 1.25 ounce taco seasoning 1.25 ounces, package

Instructions
- Turn the pressure cooker on to the Sauté setting. Add the ground beef and diced onions. Cook until beef is cooked through, drain off any excess grease.
- Add the rest of the ingredients to the Instant Pot and stir to combine. Close lid and make sure pressure release valve is set to sealing. Turn pressure cooker to manual and set for 10 minutes.
- When time is up carefully quick release the pressure cooker.
- Divide into soup bowls and top with any toppings of your preference.
Notes
- You can prepare this soup in a slow cooker by cooking the ground beef on the stove and then combining all ingredients except toppings in the slow cooker on low for 5-6 hours or high for 4 hours.
- If you don't have a pressure cooker, simmer the soup on the stove top in a saucepan for 20-30 minutes after preparing the beef.
- Toppings like shredded cheddar, sour cream, avocado, and tortilla strips add texture and flavor and should be added just before serving.
