Instant Pot Turkey Breast and Gravy
Description
Instant Pot Turkey Breast and Gravy starts with seasoning a 2½ pound skin-on, bone-in turkey breast and searing it in the pot for a browned exterior. After deglazing with broth, the turkey is placed on a trivet and pressure-cooked for 15 minutes with a natural 10-minute release. Broiling the cooked turkey in the oven crisps the skin before resting. The leftover cooking liquid is thickened using butter and flour to create a smooth, flavorful gravy that complements the turkey.
This approach yields turkey breast that stays juicy inside due to the sealed pressure-cooking environment, while the initial sear and final broil add color and texture to the skin. The herb seasoning balances savory notes and the gravy uses pan juices for richness.
The turkey breast can be served with traditional sides such as mashed potatoes, roasted vegetables, or bread. It provides a convenient roast alternative when time or oven space is limited.
For larger turkey breasts, cooking time can be adjusted to 6 minutes per pound. Side dishes suitable for pairing include Instant Pot mashed potatoes, air fryer brussels sprouts, and garlic bread. Resting the turkey after cooking helps redistribute juices and maintain tenderness.

Instructions
How To Make Instant Pot Turkey Breast
- Bring your turkey breast to room temperature. In the meantime, combine the turkey seasoning. Cover the turkey with the seasoning.
- Turn your Instant Pot on sauté mode, add in more butter and olive oil and sear the turkey breast on all sides for a couple minutes (2-3 minutes).
- Set the turkey breast aside and deglaze the Instant Pot liner with a cup of chicken broth, making sure any brown pieces on the bottom of the pot are scraped and loosened.
- Place in the trivet that came with your Instant Pot and put the turkey breast back in.
- Close the lid, set it to sealing, and set the IP to pressure for 15 minutes. Once done, let it natural pressure release for 10 minutes.
- Once ready, transfer the turkey to the oven to broil for crispy skin! Let the turkey rest for 10 minutes before slicing. Do not toss the liquid in the pot as you’ll need it for gravy.
How To Make Instant Pot Gravy
- Run the liquid in the Instant Pot after the turkey has cooked through a strainer and set aside.
- Turn your Instant Pot back on sauté mode and melt your butter in it and slowly whisk in the flour. Once the flour has fully incorporated, slowly add back in the liquid from the turkey earlier. Whisk until your gravy has thickened to your liking. Season with additional salt and pepper if you desire.
Notes
- For larger turkey breasts, adjust cooking time to 6 minutes per pound in the Instant Pot.
- Rest the turkey breast for 10 minutes after broiling to allow juices to redistribute for moist slices.
- Use the cooking liquid left in the Instant Pot to make a simple pan gravy by thickening with butter and flour.
- Suggested side dishes include Instant Pot mashed potatoes, air fryer Brussels sprouts, and garlic bread for a balanced meal.
