Instant Pot Twice Baked Potatoes Casserole Recipe
Description
The Instant Pot Twice Baked Potatoes Casserole Recipe begins by cutting potatoes into chunks with skins on and pressure cooking them with butter and seasoning. After cooking, the potatoes are mashed directly in the pot with more butter, milk, sour cream, and ranch seasoning for creamy, tangy flavor. Shredded cheese and chopped green onions are folded into the mash for added richness and freshness.
Once mixed, the potato mixture is transferred to a baking dish topped with remaining cheese, chopped chives if available, and cooked bacon or bacon crumbles. The casserole is baked until the cheese melts and browns slightly, creating a savory crust that contrasts with the soft, creamy potato base.
This dish delivers the comforting flavors and texture of twice baked potatoes but streamlines preparation using the Instant Pot. It makes a rich side suitable for family meals or potlucks and pairs well with various main courses.
The recipe highlights the use of ranch seasoning to enhance flavor and the option to adjust milk amounts for desired creaminess. Baking finishes the dish with a golden, cheesy topping and crisp bacon accent.
