Description
With a wild rice blend including various grains, this recipe utilizes an Instant Pot to cook the rice efficiently. The rice is combined with unsalted chicken stock and a small amount of salt to season without overpowering. Optional butter or olive oil enriches the flavor and adds smoothness to the cooked rice.
The wild rice is cooked under high pressure for 18 minutes, followed by a natural release, resulting in a fluffy but chewy texture typical of wild rice blends. Fluffing the rice at the end ensures separation and even texture.
This wild rice blend pairs well with flavorful mains or vegetable dishes due to its neutral but robust texture. Adjust seasoning carefully depending on stock and butter salt content. Different commercial wild rice blends may require minor liquid adjustments based on composition.
Because rice blends vary, tasting and adjusting liquid or seasoning is recommended. The recipe discourages excessive salt to accommodate accompanying dishes in a meal.
Ingredients
- 1 cup (210g) wild rice blend
- ¼ teaspoon (1.5g) fine sea salt or table salt
- 1½ cup (375ml) chicken stock unsalted
- 1 tablespoon (14g) unsalted butter or olive oil, optional
Instructions
- Add Wild Rice Blend in Instant Pot: Add 1 cup (210g) Wild Rice Blend and ¼ tsp (1.5g) fine sea salt to your Instant Pot. Pour in 1½ cup (375ml) unsalted chicken stock. Give it a few swirls and make sure all the wild rice blend is fully submerged in the cooking liquid. Optional Step: Add in 1 tbsp (14g) unsalted butter or olive oil for extra flavor and smoothness.
- Pressure Cook Wild Rice Blend: Close the lid. Turn Venting Knob to Sealing Position. Pressure Cook at High Pressure for 18 minutes, then Natural Release for 15 minutes. When the Floating Valve drops, carefully open the lid.
- Fluff and Serve: Fluff wild rice blend with a fork or spoon. Give it a taste to make sure it's seasoned properly. Serve and enjoy~ Amy + Jacky's Tips: For reference, we didn't need to add additional salt for our taste. Keep in mind it shouldn't be overly seasoned because it'll be served with flavorful main dishes or vegetables.
Notes
- Adjust liquid amounts slightly depending on the specific wild rice blend brand used, as types and ratios vary.
- The cooked rice will be somewhat chewy with the given liquid ratio; add more stock for a softer texture if desired.
- If using salted stock or butter, omit the added salt and season after cooking as needed.
